Apricot Pork Medallions Recipe

 
 


To make Apricot Pork Medallions for 4 you will need

Ingredients

1 pound Pork tenderloin medallions; cut 1 " thick
1 tablespoon Butter; plus
1 teaspoon Butter
1/2 cups Apricot jam
2 Green onions; sliced
1/4 teaspoons Dried mustard
1 tablespoon Cider vinegar
Buttered noodles

Instructions

Flatten medallions slightly. Heat 1 Tablespoon of butter over Medium-High
heat in a skillet. Saute pork about 2 minutes on each side. Remove from
pan. To juice, add 1 tsp. buitter, apricot jam, green onions, mustard and
cider vinegar. Cover and simmer for 3-4 minutes. Add prok to heat through.
Serve with buttered noodles. and green salad.
