Apricot Pork Medallions Recipe

To make Apricot Pork Medallions for 4 you will need
Ingredients
| 1 | pound | Pork tenderloin medallions; cut 1 " thick | | 1 | tablespoon | Butter; plus | | 1 | teaspoon | Butter | | 1/2 | cups | Apricot jam | | 2 | | Green onions; sliced | | 1/4 | teaspoons | Dried mustard | | 1 | tablespoon | Cider vinegar | | | Buttered noodles |
Instructions
Flatten medallions slightly. Heat 1 Tablespoon of butter over Medium-High
heat in a skillet. Saute pork about 2 minutes on each side. Remove from
pan. To juice, add 1 tsp. buitter, apricot jam, green onions, mustard and
cider vinegar. Cover and simmer for 3-4 minutes. Add prok to heat through.
Serve with buttered noodles. and green salad.
